Slow Food






Slow Food is a grassroots organization that began in 1989 with a mission to "prevent the disappearance of local food cultures and traditions, counteract the rise of fast life and combat people's dwindling interest in the food they eat." The organization was created in Italy as a demonstration on the intended site of a McDonalds in Rome. The Slow Food KM 0 project took place from 2012 to 2013 to recover Catalan cuisine using local produce and seasonal recipes. The project's emphasis on an environmental commitment included phasing out fish species at risk of extinction, and reducing carbon emissions by shortening food transportation miles. The initiative encouraged direct purchasing from local farmers within 100 kilometers of restaurants in Catalonia. The project put out a call for proposals that addressed the goals of the Slow Food movement for certification as a KM 0 restaurant for one calendar year, and supported chefs by creating a committee to share information and products, as well as publishing their work. The project successfully certified 51 restaurants and 8 open school dining rooms that committed to the environmental, social and cultural objectives of Slow Food's Mission. While the official trial period ended in 2013, there are still ongoing initiatives throughout Catalonia to address equitable food production for chefs and farmers throughout the region.
